Replace references of WORKDIR with UNPACKDIR where it makes sense to do
so in preparation for changing the default value of UNPACKDIR.

Since FILES:${PN}-ptest is already defined to include the contents of
${PTEST_PATH}, adding such an entry to the package is superfluous.
